4 cups light mayonnaise
1 10# can (106 ounces) of Red Gold® Petite Diced Tomatoes with Green Chilies, drained
32 boneless skinless chicken breasts, cooked and shredded
8 teaspoon lemon juice
8 small red onions, sliced thin
salt and black pepper to taste
32 flat bread
8 cups shredded lettuce
8 avocados, peeled and diced
4 cups sliced cheddar cheese


  1. Combine mayonnaise and tomatoes to make the Green Chili Aioli.
  2. Place chicken, lemon juice, red onion, salt and black pepper in a large bowl; mix well.
  3. Place lettuce on flat bread and top with chicken mixture and avocados. Spoon Green Chili Aioli on top.
  4. Garnish with shredded cheese.
  5. Serve with fresh fruit for a great lunch or light evening meal.
