Melon Prosciutto Salad

2 medium honeydew melons, cubed
4 medium cantaloupes, cubed
1-#10 can Red Gold Petite Diced Tomatoes (drained and lightly rinsed)
½ cup chopped fresh mint
4 teaspoons fresh lemon juice
salt and black pepper to taste
4 cups shredded lettuce
½ pound thinly sliced prosciutto, cooked and cut into strips
2 cups shredded Parmigiano-Reggiano cheese


  1. In a large mixing bowl combine the first 7 ingredients, tossing gently to combine. Arrange the melon mixture on a serving platter. Place prosciutto evenly over melon mixture and sprinkle with cheese.
  2. Garnish with cracked black pepper and fresh mint sprigs, if desired.

Suggestion: Between paper towels, cook prosciutto in the microwave for 2 to 3 minutes or until lightly crisp.
